Verdelot : the bread academy of Moulins Bourgeois

Aux Moulins Bourgeois, on ne fait pas qu'élaborer les farines qui serviront à produire le pain d'une grande partie des boulangeries d'ile de France, on y forme également les boulangers aux techniques de fabrication des pâtes à pain. Pétrins et fours de cuisson modernes, vaste dôme de lumière, hauteur de plafond généreuse, l'endroit se prête parfaitement aux prises de vues.

Tous déjà boulangers, souvent sur le point d'ouvrir leur propre enseigne, ces hommes qui viennent d'un peu partout en France, parlent le même langage, on fraternise autour du levain, on plaisante au cul du four.

Il s'agit de mon troisième reportage chez les Moulins Bourgeois et je m'y sens presque chez moi.

Au cœur de cette entreprise familiale ou l'on "écrase le grain" à Verdelot depuis 4 générations, il y a certes deux frères qui ont à cœur de prolonger les savoirs faire et de moderniser les outils de production mais il y a surtout la passion du meunier.

Et quoi de plus exaltant pour un photographe que de capter la passion d'un homme ou d'une femme pour son métier ?

Surtout quand ce travail est produit d'une main par l'artisan et de l'autre par l'industriel.

At Moulins Bourgeois, not only is the flour used to produce bread for a large number of bakeries in the Ile-de-France region produced, but bakers are also trained in bread-making techniques. With its modern kneading troughs and baking ovens, vast dome of light and generous ceiling height, the place lends itself perfectly to photography.

All already bakers, often on the verge of opening their own business, these men from all over France speak the same language, fraternising over sourdough and joking around in the oven.

This is my third visit to Moulins Bourgeois and I feel almost at home here.

At the heart of this family business, where grain has been 'crushed' in Verdelot for 4 generations, there are certainly two brothers who are keen to extend the know-how and modernise the production tools, but above all there is the miller's passion.

And what could be more exhilarating for a photographer than to capture the passion of a man or woman for their craft?

Especially when the work is produced with one hand by the craftsman and the other by the industrialist.
